Lemon Sole

Lemon Sole is a wonderful light flat fish. Full of omega 3 oils it is perfect for a mid-week fish dinner from Jan-Oct. Contrary to popular belief it doesn’t really taste of lemons, the name comes from similarities between the texture of the lemon sole’s skin and the texture of the skin of a lemon. However, it does taste amazing cooked over lemons. Or simply cooked with brown butter and served with seasonal greens.
