Skate Wings

Skate is a member of the ray family; it has huge fins which resemble wings which is why you often see this on a menu as skate wing. The structure of stake wings makes it very easy to eat as the meat simply lifts away from the bone. The meat has a similar flavour to scallops with an excellent mouthfeel. Its high collagen content also makes it a very moist fish when cooked. It is best cooked simply with brown butter and capers but there are also some more adventurous options.
