Squid

Squid is such a versatile seafood, but many people fear it going tough when cooking at home. We have all had badly cooked calamari at one point. But that is the thing squid is so much more than deep fried calamari, you can BBQ it, you can stuff it, you can put in it a risotto. And the trick to avoiding tough squid, either cook it fast and hot, think tempura and BBQ, or cook it very slowly in a stew.
