With spikes and find sticking out at all angles, John Dory is never going to win a beauty contest by they do taste delicious. John Dory have dense white flesh which is ideal for Mediterranean dishes and for BBQing. They suit being baked very well which makes them the ideal fish for traybakes with classis Mediterranean ingredients such as olives and tomatoes. If you enjoy a bit of foraging, they all go extremely well with wild garlic pesto for a summery fish dinner.


They are also called St Peter’s Fish, due to their black spot which is said to be the fingerprint of St Peter
